A New Direction

In an effort to hone my cooking skills, and try a new creative approach to things— spend more time in the kitchen; and less on the couch. It is my goal to make a different dinner each night of the month in February Sunday through Thursday nights. (we must exclude Friday and Saturday for social outings!). I have come to the conclusion that our diets are repetitive and need more veggies, color and vibrancy. This isn’t to say that I am going to go vegetarian—this is far from the case. I am going to make whole, home cooked meals for 2 using as few processed ingredients as possible. I am going to try to make the things I rely on from scratch. Including the occasional loaf of bread—sans bread maker.

This may come as a surprise to some—but Ashley, don’t you cook dinner most nights anyway? Well, yes I do—but last night, after I was done making our delicious soup and sandwich—I picked up the carton of Trader Joe’s Corn and Roasted Pepper soup just to see that in that one serving of soup—I had ingested over 50% of my daily sodium intake. I thought to myself—how hard can it be to make corn soup? I have all the stuff I need—wouldn’t it be better if I just went ahead and made it myself?

While this may be the end of quick and easy dinners—I am hoping to do a lot of the prepwork for the week on Sundays, thereby crossing off a significant amount of the workload during the week. Suggestions are more than welcome. Photos will come with each recipe. Including the “whole” ingredients used for that dish. Keep in mind—this isn’t by any means a “healthy eating” idea. There will be Butter. There will be Cream. There will be Cheese. There will be red meat. There will not be pre-made stuffed pastas. There will not be frozen burgers. There will not be processed canned food. (for the most part—but lets be realistic—the only ingredient in canned pumpkin is, well—pumpkin). There will not be store bought bbq or taco sauce. No liquid smoke either. Lots of hyper processed foods are going to be eliminated starting shortly. The cooki jar will be filled weekly with a homemade delicious treat, rather than Joe-Joes.
